Spinach Stuffed Chicken with Bacon

2 skinless, boneless chicken breasts
¼ cup cottage cheese
¼ cup ricotta cheese
¼ cup mozzarella cheese, shredded
1 cup cooked spinach (frozen works well but be sure to thaw and drain first)
4-6 slices of bacon
salt and pepper to taste

     Pound the chicken breast (the thinner it is, the faster it’ll cook) Combine the spinach and cheeses in a bowl, salt and pepper to taste, mix well (this is your stuffing). Stuff the stuffing in the chicken and wrap the chicken around so that the stuffing is secured inside. After the chicken breasts are stuffed, wrap the bacon around until the chicken is fully covered. (you can use tooth picks to prevent the chicken breast from falling apart.) Place in a heated pan and cook on medium heat with the cover on, turning the chicken so that all sides are cooked, until fully cooked, usually takes 20-30 minutes.

    Serving suggestions: Serve with fettuccini alfredo with an apple, glazed walnut, and gorgonzola cheese salad tossed in a tangy vinaigrette.
