Pink Udon Noodles

For the udon noodles, if you want them to look pink.
Tip: Cook the udon noodles the way you cook pasta.

I used beet juice and soak the cooked noodles for half hour to an hour.
Spring mix or mesclun mix

Ingredients:
Udon noodles
Mesclun mix
Tomatoes
Anything you want to put, you can even put grilled chicken.

For the vinaigrette:
1 1/4c raspberry vinegar
2 tbsp fresh lemon juice
2 tsp sugar
1/4 tsp dry mustard
1 tsp finely minced garlic
1/c Extra virgin olive oil

1. Prepare the vinaigrette: Whisk the raspberry vinegar,lemon juice, sugar,dry mustard,garlic,salt and pepper ina bowl. Whisking constntly, drizzle into the olive oil. Continue whisking until the dressing has thickened slightly. Set aside.
Hint: You can prepare this in a day advance

2. Mix the salad the very last minute.
