Montrachey Salad

Ingredients:
4 cups spring mix
1 cup fresh raspberries
1 cup mandarin orages segments
1 cup goat cheese

Lemon thyme vinaigrette:
mince 3T fresh thyme
1 cup of freshly squeeze lemon juice
1 1/2 cups olive oil
1 1/2 cups vegetable oil

For Lemon thyme vinagrette, mix all together until emulsified.

When ready to assemble the salad; spring mix middle of the plate then 5 raspberries and mandarin oranges on the plate,then top it off with goat cheese on top of the spring mix then drizzle with the lemon thyme vinaigrette.
